Choosing durian gets much easier once you know what to smell, look, and listen for. Whether you're shopping at a market or ordering from a specialist shop, the same freshness rules apply. This is the practical checklist our team uses when inspecting durians before serving them.

Start with the Stem Aroma

A ripe durian releases aroma from the stem first. Bring it close to your nose—a pleasant, slightly sweet smell means the flesh is ready. A sour scent? It may be overripe.

Look at the Shell and Colour Tone

For Musang King, look for a dull olive tone with a star-shaped base. Black Thorn leans darker with a unique brownish seam. Bright green spikes usually mean the fruit still needs time to ripen.

Tap the Shell and Listen Carefully

Gently tap the shell with the back of a cleaver or your palm. A hollow, resonant sound indicates the flesh has separated slightly from the shell—perfect ripeness.

Use the Spikes as a Texture Clue

Ripe durian spikes bend slightly when pressed together. Spikes that are stiff and sharp suggest the fruit is under-ripe.
